Gentle motion reciprocating agitation creates headspace movement and improves convection heating in horizontally oriented containers. This process reduces cycle times during both heating and cooling phases, eliminates surface burning, and promotes better process hydration. The result is improved product quality, thanks to reduced thermal burden, with cycle time reductions ranging from 20% to 60%. Allpax retorts are equipped with Allen-Bradley controls and a host computer for recipe creation, ensuring 21 CFR Part 11 compliant batch records. Designed by thermal processing specialists, these controls offer the highest level of food safety compliance in the industry. Gentle Motion retorts also provide the dual benefits of higher throughput and improved product quality, thanks to their robust design and flexible agitation capabilities.
