Vacuum-Cooled Product Cookers

Alpax Vacuum-Cooled Product Cookers (VCPCs) are specialized retorts designed to cook or thermally process food products and ingredients in a saturated steam environment. After the application of heat, a specialized vacuum generation system is used draw a vacuum on the process chamber. The vacuum system brings vessel pressure down to a setpoint below one atmosphere (<1 bar/<14.7 p.s.i.a) which lowers the flashpoint of water thereby reducing the product temperature through evaporative cooling.

  • All food-grade stainless steel construction
  • Product hydration system maintains product water content during cooling
  • Capability of bringing product to refrigerated temperatures with properly sized vacuum system
  • No need for mechanical refrigeration after cooking
  • Double door design prevents microbial cross contamination with raw/uncooked product (load side) and cooked/sterilized product (unload side).
  • Available in two diameters -Ø54"/Ø1,300mm/and Ø63"/Ø1,600mm
  • Available as a manual configuration or a fully automated system requiring only one operator
