Water Spray Process - Gentle Motion

Gentle motion water spray retorts rock the load through a slow horizontal arc while high-volume nozzles spray heated water over the containers. The motion stirs product inside the package without the end-over-end rotation of a rotary retort. It suits horizontally oriented pouches and trays that benefit from agitation but will not tolerate tumbling.

How the gentle motion process works

Water is heated and sprayed across the load through strategically positioned nozzles, so every container sees the same temperature. Overpressure holds package seals as internal pressure rises during heating. The basket cradle reciprocates through a shallow arc, moving headspace through the product to speed heat transfer. Cooling runs through the same nozzles under maintained overpressure.

When to choose gentle motion

Choose gentle motion when the product heats slowly on its own, the package lies flat, and rotation would damage the contents or the seal. Low viscosity products such as particulates in sauce, and adding hydration to dry ingredients such as rice and beans are best suited for this process. l. If the product tolerates full rotation, a rotary water spray retort moves heat faster.
